Lentil Soup

In our house we love a good bowl of homemade soup.  Nothing can beat it.
It is tasty, quick to make, cheap, and it lets me smuggle vegetables into the monsters without them noticing! What more could you ask for!

Todays soup was the classic Lentil.
I cannot stress how easy this soup is to make, what’s the bets most of you know this anyways, but just thought that I would remind you 😉
There are different variations, from using ribs, to ham hough, to lardons or just ham stock.
I have been known to muddle it up a bit, I do like to do that every now and again, and use Lamb stock cubes, and it was lovely!

Heres my Lentil soup recipe

(A little note before starting, I sometimes don’t measure much and just ‘chuck’ it in, but stick with me)

Lentils – about 1/4 of a small bag
1-2 carrots chopped
1-2 garlic cloves crushed
1 onion
1 pack lardons
Salt and Pepper
300ml Ham stock

In a pan, fry off lardons, onion and garlic, until onion is translucent and lardons, slightly browned.
Add in chopped carrots, (if not blending at the end the Pampered Chef Food Chopper is perfect for getting it super fine)
Add in stock and give a good stir.
Add in lentils, seasoning and leave to simmer for 20 mintues.
Once 20 minutes is up, give soup another good stir.
You can serve as is, or if you like smooth soups, blend it and serve.

Bio Oil Review

Recently we were asked if we would like to try out some Bio Oil.
I had heard of Bio Oil and its claims to help reduce scars, stretchmarks and the likes.

Regardless of how well or little known the company of this kind of product is, I am always a little bit dubious.  But I didn’t need to be.

We used the oil, and still are, on myself and my mini man.
Myself for the lovely stretch marks my generous monsters gave me. And the mini man has some scarring on his cheeks from a skin infection, that wouldn’t quite heal as he kept picking it. I did tell you they are monsters!

These are the mini mans results after using bio oil for 2 weeks.
His scarring has reduced as has the redness that was constantly there.
Impressed? I certainly am.
And if that’s after 2 weeks, how long until its cleared up? Not too much longer I hope.

As for myself, I won’t be grim and put pictures up of my lovely stretch marks. However, I have noticed a slight difference in them. Not as much as Juniors but they are reducing. And again with continuous use they will be banished forever! Well fingers crossed!

Our verdict:
We love using this, as you can see from the results above, that this is one Product that does actually work!  I am amazed by the difference in my mini mans face after using this, some friends have also commented on his face and have asked if we have used anything and if so what.  And I have gladly told them it is Bio Oil and have recommended it to friends and family.

Haddock Fishcakes

Want a quick, easy, most importantly tasty dinner that everyone in the family, even the dog, will love?
Make yourself a pile of fishcakes. So simple to make. And dead tasty.

We get all our fresh fish from John at Delish Fish. You cannot get fresher. Caught and shipped straight to you!
Now that’s service.
The fish is certainly not as piddly sized as you get in the supermarkets. But huge portions instead.

All it taken to make these fab fishcakes were: 3-4 medium potatoes, 2 haddock fillets, some grated cheese, 3 spring onions chopped, seasoning, parsley, and an egg.

I poached the haddock in milk until cooked.
Drained and flaked and put to side to add into potatoes once ready.
Peeled and chopped potatoes and boiler until soft.
Drained and added a splash of milk, knob of butter and some seasoning, and mash.
Mix in egg, fish, cheese and parsley.
Rolled into balls and placed in fridge for a couple of hours.
When ready to cook, I fried them in a pan until golden brown and served with salsa and some salad lettuce.

Quality Mummy Time

Sometimes I just want to scream. Or lock myself in a room and curl up into foetal mode.
Why?
I have 2 angelic monsters for children.

Don’t get me wrong. I love my children unconditionally, what mother doesn’t. But there are days that push me to, I’ll be blunt, the Pinot chilling in the fridge.
There are days that when the Mr comes home from work I run away and hide to get that 5 minutes of peace I have been longing for all day. And let’s not forget the times I have tried, and failed, to keep the monsters from fighting with each other and/or harassing poor Dougal Dog.

All the mums out there need QMT. Quality mummy time. Where we can just be alone for 20-30 minutes or more. Whether it be a hot bath, the gym, a friends. Just to take time out to be us, not the mother/cooker/cleaner/laundry lady/wife. Just us.

*Brainwave! I am going to start my own club. The Tired Mummy Club. And have monthly sessions. Be it myself or with some other mummy’s.

As I write this I am having my own QMT in a hot bath and am tempted to text the Mr and get him to bring me that glass if chilled Pinot. Large if you don’t mind.

So mummy’s. Get some time set aside, weekly, fortnightly, monthly. Whichever you need and get your time in.
Hell I might go all rebellious and get my 30 mins just before bed, so I can make sure I am in the land of nod before the Mr comes to bed and his snores keep me awake til silly o’clock in the morning!
Use it how you please.

My one bit of advice?! At your alone time have some cake or wine. Or go the whole hog and have both! 😉

Things Men Say

Now there are lots of blog posts about things kids say, I have had my fair share of funny things (your boobies are your treasures! And the likes)
And I thought it was only fair to let the Men join in too.
Well we wouldn’t want them to feel left out would we?

Here are some examples to start us off that the Mr has said to me:

While looking at funny lonely hearts I seen one that was a male stating he wanted to meet a girl between the SIZES 8-12 and had put no bigger than a 12. I said to the Mr “what a cheeky buggar! I’d tell him to stick it. I hope he doesn’t get any replies”.
His reply was “well he maybe doesn’t want a fat girlfriend”
Ahem, I am a (was at the time) size 14!

And his dad doesn’t fair any better I am afraid. At least I know where he gets it from.

The in laws had a party a few years back with family and friends. Some of my friends were there and one of them has medium to long hair.
My father in law proceeded to tell her she had lovely horses hair!

So lovely people, what have the men in your life said to you that’s made you laugh, cry, give them a slap or all 3?!

Meal Planning Monday – 18 Feb

My kitchen is finished!! Yee ha.
I can now get back into my cooking/baking/general living in kitchen. I am so excited.
All we need to do is air it a little to get rid of the smell of paint. Hopefully it won’t take long.

We are gradually moving things back into the kitchen. We have our main items we use daily. Just cleaning the units and bringing the rest back in.

So this weeks meal plan is just a list of what I have and will decide on the day what we will be eating.
Next week will be better I promise as I will have all my cookbooks back (and maybe some new ones 🙂 )

Leftover lamb. Thinking a curry

Tuesday
Mummysknee gave us some proper Italian Ragu 🙂 will be having that with salad

Wednesday
Lemon Sole from Delish Fish

Thursday
Beef and sweet potato pie

Friday
Joes burgers and baked potato and salad

Saturday
Something with chicken

Sunday
Some Joes garlic and herb sausages. Possible use them and make stovies
